Yogurt & Tahini Sauce
This sauce can be used like a Bernaise or Hollandise and is much healthier
Ingredients
- 500ml plain natural yogurt
- 2 tbsp tahini
- 3-4 cloves of garlic (finely chopped,
- salt
- juice of 2 lemons
Method
Empty the into a stocking and hang for 1 ½ days. This will drain the excess liquid from the yogurt and leave a lovely thick mixture to work with. After this process you should have about 350mls of yogurt.
Mix the yogurt with the tahini, garlic, salt and the lemon juice.
Keeps for a week.
Variation: Add chopped up Mint and or Tarragon.
